Our client, a prestigious membership-based club in Hong Kong, is seeking an experienced Executive Chef to lead a busy Cantonese restaurant (including dim sum). The restaurant seats approximately 400 guests and serves members only, offering casual dining rather than fine dining. This is a high-profile role requiring operational leadership, creativity, and team management, while maintaining discretion for the outgoing chef.

Key Responsibilities:
  • Lead a kitchen team of ~30 staff, managing daily operations, food preparation, and production to ensure consistent quality and member satisfaction.
  • Plan and implement menu cycles, special menus, and seasonal dishes, taking into account members’ preferences and feedback.
  • Manage portion control, presentation, and cost of sales targets, minimizing waste while maintaining quality.
  • Ensure compliance with food safety and hygiene regulations (HACCP) and internal standards.
  • Mentor, motivate, and develop culinary staff, including training and performance management.
  • Assist in preparation of reports and basic administrative work related to kitchen operations.
  • Collaborate with F&B Manager and GM on operational initiatives and menu planning.


Requirements:

  • Minimum 5 years’ experience as Executive Chef in a large-scale Cantonese or Chinese restaurant; hotel background preferred.
  • Skilled in dim sum and Cantonese cuisine; casual dining experience preferred.
  • Fluent in Cantonese; English proficiency is a plus but not mandatory.
  • Good computer skills for basic reporting and documentation.
  • Strong leadership, team management, and operational sense.
  • Preferably Hong Kong local, aged 40–50, discreet and professional.
